Hmmm - yummy - mushrooms!  Now in this part of the world we pick our own, wood blewits in the copse in November, chanterelles, birch boletus, the deceiver, mycenas, in the birch woods  from September to mid-October. Ceps, puffballs, inky caps and fairy ring champignons at the top of the orchard in July. Morels and  field mushrooms in the meadow in June.  Yes, I know I've gone backwards - I'm retrospecting, deliciously.  If you really want a mushroom sauce recipe, you could start here.  We eat them with garlic, we eat them with lemon and herbs, we stuff them, we add them to pasta and we put them in omelettes. We have a mushroom soup to die for.  We dry them and store them in great glass jars to use when all the ground is under three feet of snow.  We practically live on mushrooms at certain seasons.   But hang on a moment - now that I think about it - do we have a dedicated mushroom sauce recipe?  No, we don't.

How odd, How bizarre.  I don't think one makes sauce out of mushrooms - not if you're a real cook, that is.  Elizabeth David,with 13 mushroom entries in the index of "French Provincial Cooking" does not actually have a mushroom sauce recipesimply a passing reference to "vegetable puree sauces such as tomato, mushroom."

Marcella Hazan in "The Classic Italian Cookbook" has a good dozen recipes with mushrooms but none of them are a mushroom sauce recipe.   This moreover, in Italy - where mushrooms and truffles are taken seriously.

Jane Grigson has an entire book devoted to mushrooms - "The Mushroom Feast" and, hurrah, a great list of sauces in the index.  Hmm - the trouble is that not one of them is a mushroom sauce recipe.  Dear Jane is using sauce in a rather odd sense - sweetbreads, sauteed in butter with mushrooms and cream added and then served on toast, are indexed as a sauce.  It's not my idea of a mushroom sauce recipe; it's not my idea of any sort of sauce, more a delicious light meal.

 Julia Child, in Beck and Child's "Mastering the Art of French Cooking" devotes one full index column to mushrooms, 31 entries with, at last, a cross reference to "sauces, mushroom"  Here we find 3 instances of a mushroom sauce recipe, all in the first volume of this breathtakingly wonderful book - yes, yes, you've got there - the "book of the film" in "Julia and Julie".  Sales in 2009/2010 must have rocketed - deservedly so!

In the end, mushrooms are a meal on their own, but if you really want a mushroom sauce recipe, Mesdames Beck and Child can give you three, one with cream, one with tomatoes, one with browned mushrooms.

None of this beats the only way to really use mushrooms as a sauce.  Sautee them in butter, because a combination of mushrooms and butter is the food of the gods.  Add a spoonful of cream and half a glass of a dry white wine.  That's it.  That's my idea of a mushroom sauce recipe.

Mushroom Sauce Recipe

The ingredients include 6 oz (170 g ) of mushrooms which must be sliced in tiny pieces, A half pint of the milk, a half oz (15 g ) of good butter, one full table spoon of flour, olive oil, salt and pepper as per requirements. In the start you must heat a little olive oil and use it to melt the butter in it. Then add the mushrooms in this and cook until these are soft and dark in colour. Then remove the pan from heat. Then add the flour and the milk in it. Then mix all these ingredients and stir. Then again heat the pan on a medium heat and keep continuous stirring until the mixture in the pan is thickened. Add required amounts of salt and pepper and pepper and cook for almost eight minutes. Then you must serve it hot.
